I applaud you. I have been playing around with GF baking over the years (too much sugar and refined carbs), and haven't had much success. I am also a private chef, in Los Angeles, catering to a very demanding clientele, who like good food. My focus is insulin resitance and now, gluten free, as well. Your site is refreshing! Starches like quinoa or brown rice fit the bill, and you would be able to make dishes with all of the legumes (black beans, chickpeas, navy beans). For this time of year, given we're heading into a cold snap, try a few different options for roasted vegetables -- try things like fennel and celeriac instead of roasted potatoes. Low carb breads (yeast-free) can also be made with nut flours. The best ones use egg whites and baking soda to provide loft and structure. He has put me on a diet for two months that involves eating foods with no yeast, wheat, gluten or sugar, but I can have beef, chicken, salmon, and halibut.
